I suspect you are running out of memory. You would need to look at your web server logs to be sure. https://codex.wordpress.org/Editing_wp-config.php#Increasing_memory_allocated_to_PHP

I did find the issue with the image not being added to the post. Turns out that DayOne with not adding the ".jpg" to the filename. This is fixed in the next version of Postie (available shortly)....
